To Finish: Platters of warm double chocolate brownies served with house made vanilla ice cream

I love to cook, but never do because I hate having to eat the same meal four times in a row. So when Rocky Mountain Flatbread invited me to the media event for pizza making parties to make my own cocktails and pizza, I was excited as I knew I could really customize my pizza to accommodate my lactose intolerance issue.

First up, to whet our appetite, appetizers arrived.  Below is Bruschette with toasted bread and lovely tomatoes and herbs.  We should received cheese stuffed mushrooms and there was also one with vegan cheese made out of cauliflower (“Cau”) for me.

And now on to the cocktails, first up Earl Grey Gin, which is a refreshing adult version of ice tea and which is a nice way to start the evening as its not that boozy and tastes great especially if you’re a tea of Earl Grey tea like me.  I’m not a fan of gin highballs but when they’re in cocktails like this one, the gin takes on the other flavours.

The next cocktail which was a Triple Berry Mojito though entailed a bit of hard work as we had to muddle our mint – cry me a river!  The muddler actually releases the flavours of the mint which is much more preferable than chewing the leaf of mint. But hey, no judging, if I you do happen to see mint leaves between my teeth, look away.

The Triple Berry Mojito was a joyful concoction of berry puree, rum, syrup that finished off with trees of mint.  A real thirst quencher which really paired nicely with my spicy pizza.

Okay two cocktails in and I’m feeling good…. nah nah nah nah….  like I know I should… I feel good…. On to the pizza making station where there were already balls of yeast with husband beaters, I mean, rolling pins, waiting for us to roll the dough into a round 10″ circle, although my neighbours were inspired to roll their’s into a heart.  Awww, isn’t that sweet!

Next, we ladled a tablespoon or two of tomato sauce or pesto sauce on top of our circles of yeast. The tendency for most people is to put too much and if you do, the sauce overpowers the dough and other toppings. I chose to put a bit of both, wondering if I should put more on since my pizza would be cheese-less. but I sustained. Next, we were instructed to put on a small layer of cheese before the toppings!

So what does a person put on a pizza to make up for the absence of cheese? I found that if one of the toppings is a spicy meat, it adds enough flavour that you don’t miss the cheese. I also added roasted red peppers, caramelized onions, mushrooms and pepperoni and a little bit of the vegan cau cheese.  Next, its off to the pizza oven, where the pizzas only cook for 10 minutes or less. I’m not sure of the time but hey, time flies by when you’re drinking cocktails..

And voila, here’s my cheese-less pizza cooked to perfection with a light crust that is crispy and not like the burnt edges you find with Neapolitan pizzas, which I don’t like.  And despite not having cheese, besides the Cau cheese, it was rather tasty.  I could taste the tomato and pesto sauce intermingled with the spicy salami.  It was so good, that I ate the whole thing.

Okay, just when I thought I drank enough cocktails, my friend and I went to learn how to make Mule Dessert Mocktails from ginger beer and mango puree. I don’t like beer, but when it’s combined with other fruity ingredients, the taste of hops are barely distinguishable.  Here, the lovely ginger and mango puree took the flavour forefront.

And what dinner is complete without dessert?   Save room for Double Chocolate Brownie with vanilla ice cream. Because I inhaled my pizza, I took this home to have for breakfast the next day (double chocolate, need I say more?).   And all is right with the world, as I rolled home, full of pizza and cocktails and wondering to myself, “When can we sign up for pizza making parties again?”.
