Executive Chef & Instructor Romy Prasad, welcomes Autumn with the return of his cooking demonstrations at Federico’s on Thursday, October 8, 2015. What better theme for the new season than Thanksgiving, as Chef Romy takes key elements of a traditional Thanksgiving dinner and fall ingredients and haccents it with Italian flavour.
Not only is our Executive Chef Romy Prasad an amazing Chef, he is also a seasoned instructor and eager to once again share his culinary knowledge and skills with our guests in the first of a series of cooking demonstrations starting Thursday, October 8 2015. For those who have never been – the room is set up for a maximum of 30 guests in an intimate setting (using the dance floor) with Chef Romy at the helm of his cooking demonstration area (parallel to the south wall) directly in front of guests. Our TV screens are creatively used so that guests can also see a birds eye view of his demonstration via a camera setup above him. Like any occasion involving food and drink, conversation compliments the atmosphere, as does interactive participation from ambitious guests who join and assist Chef Romy at his cooking station.

Zuppa di Castagne, Autumn chestnut soup
roasted chestnuts, light cream and nutmeg garnished with truffle oil and organic mushrooms
Ravioli alla Zucca
house made ravioli filled with three types of autumn squash in a fresh sage and brown butter sauce
Rotolo di Tacchino, Stuffed Turkey Roll
whole organic turkey, deboned and stuffed with chestnuts & fresh herbs, oven roasted and accompanied with a stuffing made with crusty foccacia bread, celery, sage, parsley & pine nuts
brussels sprouts with pancetta, roasted turnips and rutabaga
Tiramisu con Zucca
