Truffles Fine Foods’ team is gearing up for the exciting holiday season ahead, and look forward to catering events and parties – whether a corporate Christmas party for 500 guests or an intimate dinner for four.

Led by Truffles’ head Chef, the catering team has created a stunning selection of appetizers, featured dishes, and mouth-watering desserts. As an add-on option, we are also pleased to suggest wine and cocktail pairings to enhance guests’ culinary experience. Each menu is thoughtfully tailored to highlight our region’s local, freshly-harvested offerings.As the holiday season approaches, we are proud to present two unique Christmas catering options:

A fully-catered dinner with Truffles’ staff on site at our clients’ homes, offices, or selected venue of their choice, featuring either hors d’oeuvres or a buffet dinner; or Christmas Dinner-To-Go.

CHRISTMAS MENU 2016

Hors d’Oeuvres

Gruyere Cheese and Snipped Chive Panna Cotta
featuring stuffed profiteroles and caramelized bacon jam glaze

Toasted Cumin and Potato Rosti
with saffron cauliflower puree and fried quail egg

BC Wild Smoked Salmon
served on delicate fingerling potatoes with dill and mustard cream and caviar

Pecan Shortbread
glazed with balsamic glazed fig chutney and shaved pecorino cheese

Whole Roasted Boneless Turkey
Succulent whole turkey, trimmed and rolled with fresh herbs
and seasoning. Served with Truffles’house-made cranberry chutney,
rustic vegetables laced and stuffed, and rich pan gravy

Sliced Maple Dijon Glazed Double Smoked Ham
Tender and generous slices of ham, double-smoked for extra
flavour, and glazed with our house-made Maple Dijon dressing

AAA Angus Beef Striploin
Cooked and rested to perfection, served with zesty
horseradish, Dijon and port wine reduced jus

Choice of Two (2) Sides plus bread rolls:

Cauliflower Gratin
with rich béchamel sauce and four savoury cheeses

Buttered Yam Puree
garnished with toasted nuts and Canadian maple syrup

Herb and Garlic Roasted Fingerling Potatoes

Steamed Vegetable Medley
featuring carrots, green beans, cauliflower and broccoli

Bread Rolls and Butter

with local goat cheese, candied pecans, and a baby dill garnish
