Amuse

Fruit was harmed in the making of this dish…
Pork belly crackling, served with cantaloupe three ways

i.
Say “shakshuka” three times fast…

Eggplant shakshuka, served with crispy egg
Paired with: Vodka, Walter Classic, lemon, rosewater, zaatar, black pepper
Garnish: fresh cucumber fan, date, lemon

ii.
It’s French toast with a bow tie…

Earl Grey “lost” brioche (pain perdu) served with sugared rose petals, dehydrated mint, ginger mascarpone
Paired with: Gin, Walter Classic, Worcestershire, orange, ginger, hot sauce, lemon, Walter rim
Garnish: celery, lemon, rosemary

iii.
Ciabatta shape up…

Porchetta, served with house-made ciabatta, pear chutney, pickled shallots
Cocktail: Lager, Walter Classic, lemon, lime,
Garnish: lime, dill pickle or porchetta slice

iv.
Smoke Show…

Smoked corn chowder, maple salmon belly
Paired with: Oyster Shooter. Oyster, vodka, Walter Classic, grated horseradish, lemon

Seared snapper, served with wonton crisp, red pepper and preserved lemon compote, zucchini soba “noodle”
Paired with: Tequila, Walter Classic, red pepper & preserved lemon compote, soy, pineapple, lime
Garnish: wonton crisp, lime

Table-side rum sabayon, assorted gelato, genoise, chocolate mousse, fresh fruit
